3 ripe bananas
1 egg
1/3 cup of oil
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 cup maple sugar
Mix dry ingredients in one bowl, wet ingredients in separate bowl then blend together just until mixed.
Fill 12 paper lined muffin tins.
Top each one with a shake of cinnamon and a dash of maple sugar.
Bake 375 for 20 minutes.
